Dairy in the Classroom continues with Mrs. Virginia. This week she brought one of her laying chickens named Betty for the students to see and pet. We discovered that chickens have combs, wattles, tail feathers, and claws. We also found our about the many different animals that lay eggs and one of our students was lucky enough to dress up like a big chicken.
We also had another visitor. Mrs. Smith came and we made fresh mozzarella. After the whole milk had come up to 90 degrees, the citric acid was added, rennet added , and strained after coagulation, the students were able to pull their strings of cheese and then enjoy.
